Recipe of Carrot Cake
Ingredients of Carrot Cake:
- Brown sugar 175 gm
- Oil 175 ml
- Eggs 3
- Carrot (grated) 140 gm
- Raisins 100 gm
- Orange zest of 1 orange
- Flour 175 gm
- Baking powder 1 tsp
- Baking soda 1 tsp
- Ground cinnamon 1 tsp
- Grated nutmeg 1/2 tsp
Frosting of Carrot Cake:
- Icing sugar 175 gm
- Orange juice 1-2 tbsp
Method of Carrot Cake:
Beat the sugar, oil and eggs in a bowl. Stir in the grated carrots, raisins and orange zest.
Sift the flour, bicarbonate of soda, baking powder and spices into the bowl. Mix everything together.
Pour the mixture into a greased and lined tin and bake at 180 degree C for 40-45 minutes or until done.
Cool in the tin for 5 mins, the turn it out, peel off the paper and cool on a wire rack. Beat the frosting ingredients in a small bowl until smooth.
Put the cake on a serving plate and drizzle the icing.
