Recipe of Blueberry Streusel Cake

Ingredients of Blueberry Streusel Cake:

  • Butter softened 1/2 cup
  • Granulated Sugar 3/4 cup
  • Large eggs 3
  • Vanilla essence 1 tsp
  • Milk 1 cup
  • Flour 2-1/2 cups
  • Baking powder 1 tbsp
  • Cinnamon powder 1 tsp
  • Nutmeg 1/2 tsp
  • Salt 1/2 tsp
  • Blueberries (frozen or dried) 2 cups

Ingredients for Streusel Topping:

  • Flour 3/4 cup 
  • Oats 3/4 cup
  • Brown sugar 3/4 cup
  • Butter 1/2 cup

Method for Blueberry Streusel Cake:

Beat butter and sugar, add in eggs 1 at a time the add vanilla essence, milk and mix, add flour, baking powder, cinnamon, nutmeg and salt. Mix lightly to moisten , continue to stir until smooth, spread in a greased 9x13 inch rectangular pan, sprinkle with blueberries.

Method for Streusel Topping:

Measure flour, oats an brown sugar into small bowl, mix in margarine until mixture is like bread crumbs, spread over blueberries, bake on 180 degree C for 45 minutes, cut into pieces and serve.
