Recipe of Coconut Layer Cake
Ingredients of Coconut Layer Cake:
For Cake:
- Butter 1 cup
- Flour 2-1/2 cups
- Sugar 2 cups
- Eggs 5
- Vanilla essence 1 tsp
- Almond essence 1 tsp
- Baking soda 1 tsp
- Salt 1 tsp
- Buttermilk 1 cup
- Shredded coconut 1/2 cup
For the Frosting:
- Cream cheese 8 oz
- Butter 1/2 cup
- Coconut milk 3 tbsp
- Icing sugar 3 cups
- Shredded coconut 1-1/2 cups
Method of Coconut Layer Cake:
Beat butter and sugar until light and fluffy. Add eggs one at a time. Add vanilla essence and almond essence and mix. Add in flour, baking soda and salt. Add buttermilk, and then fold in coconut with a spatula. Pour batter into greased and lined sandwich pan. Bake at 180 degree C until golden and a toothpick inserted into the middle of the cake comes out clean. Let cake cool on wire racks.
To make the Frosting:
Beat cream cheese, butter and coconut milk until combined. Slowly add icing sugar and beat until creamy. Spread one round cake layer with coconut frosting, then place second cake on top of it. Frost top and sides of cake, then sprinkle all over with coconut and press coconut onto sides.
