Recipe of Cashew Chicken
Ingredients of Cashew Chicken:
- Soy sauce 1/4 cup
- Rice vinegar 1 tbsp
- Brown sugar 1 tbsp
- Oyster sauce 2 tbsp
- Sesame oil 1 tsp
- Oil 3 tbsp
- Chicken thighs 4 (cubed)
- Salt to taste
- Garlic (chopped) 1 tbsp
- Ginger (chopped) 1 tbsp
- Capsicum (chopped) 1
- Chicken broth 1/4 cup
- Corn flour 2 tbsp
- Cashew 1 cup
- Green onions (sliced) 2
- Rice/Noodles to serve
Method of Cashew Chicken:
In a bowl, mix together the soy sauce, vinegar, brown sugar, oyster sauce, and sesame oil.
Set aside. Heat the oil and add the chicken thighs. Sprinkle salt and let the chicken brown. Add in the garlic and ginger and then the capsicum. Add in the stock. Pour in the sauce mixture, then mix the corn flour with 1/4 cup water to make a slurry and pour it in. Stir the sauce to thicken, then add the cashews and stir to coat everything with the sauce, adding a splash of water if the sauce is too thick. Finally, sprinkle on the green onions. Serve with cooked rice or noodles.
