Recipe of Kashmiri Pulao
Ingredients of Kashmiri Pulao:
- Chicken 1 kg
- Yogurt 1 cup
- Ginger garlic paste 2 tbsp
- Whole spice 2 tbsp
- Cardamon large 2
- Cinnamon 1 pcs
- Clove 6
- Bay leaf 2
- Star anise 2
- Cumin 1 tsp
- Coriander whole 2 tbsp
- Nutmeg mace 1 tsp
- Salt 1 tsp
- Green chilies sliced 10
- Mint 1/2 bunch
- Coriander 1/2 bunch
- Rice 350 gm
- Onion sliced 6
- Chicken cube 1
- Lemon juice 2 tbsp
- Red chili 1 tbsp
- Orange color pinch
- Screw pine essence pinch
- Clarified butter 5 tbsp
Method of Kashmiri Pulao:
Marinate chicken with yogurt, 2 tbsp ginger garlic paste, 2 tbsp whole spice, 1 tsp cumin, 1 tsp black pepper, salt, red chili, green chili, mint and coriander for 30 min.
Now heat 1 cup oil add cumin, bay leaf, cloves, cardamon, black pepper, star anise, now add onion sliced fry till brown, remove few brown onion, now add 4 green chilies, then add marinated chicken, ginger garlic paste, green chutney, now add mace and nutmeg, lemon juice, now add rice, give steam add orange color, mint and coriander lastly add clarified butter and give steam and serve.
