Recipe of Kashmiri Pulao

Ingredients of Kashmiri Pulao:


  1. Chicken 1 kg
  2. Yogurt 1 cup
  3. Ginger garlic paste 2 tbsp
  4. Whole spice 2 tbsp
  5. Cardamon large 2
  6. Cinnamon 1 pcs
  7. Clove 6
  8. Bay leaf 2
  9. Star anise 2
  10. Cumin 1 tsp
  11. Coriander whole 2 tbsp
  12. Nutmeg mace 1 tsp
  13. Salt 1 tsp
  14. Green chilies sliced 10
  15. Mint 1/2 bunch
  16. Coriander 1/2 bunch
  17. Rice 350 gm
  18. Onion sliced 6
  19. Chicken cube 1
  20. Lemon juice 2 tbsp
  21. Red chili 1 tbsp
  22. Orange color pinch
  23. Screw pine essence pinch
  24. Clarified butter 5 tbsp


Method of Kashmiri Pulao:


Marinate chicken with yogurt, 2 tbsp ginger garlic paste, 2 tbsp whole spice, 1 tsp cumin, 1 tsp black pepper, salt, red chili, green chili, mint and coriander for 30 min.


Now heat 1 cup oil add cumin, bay leaf, cloves, cardamon, black pepper, star anise, now add onion sliced fry till brown, remove few brown onion, now add 4 green chilies, then add marinated chicken, ginger garlic paste, green chutney, now add mace and nutmeg, lemon juice, now add rice, give steam add orange color, mint and coriander lastly add clarified butter and give steam and serve.
